90g (3oz) butter
1/3 cup brown sugar, lightly packed
1 cup plain flour
½ cup brown sugar, firmly packed
1 teaspoon vanilla
1 tablespoon plain flour
½ teaspoon of baking powder
1 ½ cups coconut
1 cup bottled fruit mince
Beat butter with sugar until light and creamy. Stir in sifted flour, mix well. Press mixture into a 28cm x 18cm greased lamington tin lined with greased paper. Bake in a moderate oven, spread with prepared topping, bake further 25 minutes to 30 minutes, until firm and golden brown. Allow to cool in tin. When cold, dust with sifted icing sugar. Cut into slices.
Beat eggs, sugar and vanilla until thick and creamy. Fold in sifted dry ingredients, coconut and fruit mince, mix well.
